Recipe: Spaghetti Squash with Chickpea Tomato Sauce (Oil-Free, Vegan)

Fall is here and that means… spaghetti squash! They were on sale at our local grocery store a few weeks back, so I decided to pick one up. I wasn’t sure what we were going to do with it, but I figured Brian would make something delicious.

We roasted it in the oven and before I knew it, Brian was adding a splash of this and a splash of that to the sauce. It turned out great on the first try, so we knew we had to share the recipe. Best of all, it is vegan and oil-free. We hope you try it out!

I just tried cooking a spaghetti squash in my 6qt instant pot! It was almost 3 pounds but fit and took about 20 min under pressure whole. What I don’t like about cooking it whole though is that it is more difficult to scoop out the seeds after it’s cooked for some reason…

Excellent video Jess and Brian ! I am transitioning right now trying to eat a lot of raw salads and fruits and some awesome cooked meals. I love that you use lots of spices and seasonings. I love eating raw foods helps me lose weight and I feel great but I need the quote for the Protein and comfort type foods.. I’m a nurse graveyard shift and I am so so hungry when I get off work in the morning and don’t feel like eating a salad . This one would be great or one of your soups ! Don't know if you ever tried it but you need to try cooking your spaghetti squash in your instant pot much faster much easier

I can't find liquid aminos in Canada. I have been using Bragg's Liquid Soy Seasoning (Natural Soy Sauce Alternative). Is this the same? Regardless, everything has turned out delicious! Your recipes/ site are helping me change to a healthier way to eat and I feel great!
