Strawberry Seafoam | Baked Meringue Cookies | Vegan Recipe by Mary's Test Kitchen

These vegan strawberry meringues are crispy, sweet and a wee bit tart. The recipes is simple and uses only four ingredients.

There are two parts for this recipe.
1 - Vegan Meringue made from aquafaba, sugar and vanilla.

2 - Strawberry Dust made from plain, dehydrated strawberries. Make strawberry chips in your oven and use a blender to blend them into a powder.

BAKING INSTRUCTIONS
Bake at 170°F (77°C) for 1.5 hours. Then crack the oven door open and let it cool to room temperature. You want to let the meringues dry completely.

What is Aqua Faba? Strange as it sounds, it is the water from a can of legumes such as chickpeas, great northern beans, white kidney beans, navy beans and cannellinis. The viscous liquid whips up to stiff peaks for meringue. Watch this video to see: https://youtu.be/kExpx2BzIOQ

Totally works, friends 😀 I used 1/4 cup raw sunflower seeds, then boiled them in water (instead of soaking), and used in place of the cashews. Finished product looks the same.

A few notes of concern – Never EVER use corrageenan! There are other options. 🙏It is HORRIBLE for your gut. ALSO – Not all extra virgin cold pressed coconut oil tastes like coconut.

I don’t want to use « oil » , is it possible not to add in the recipe?

Is « tapioca » flour is a must in the recipe?

I know this is super old and you may have learned this by now, but if you don't have pure lactic acid, I've found that the liquid from a jar of sauerkraut works very well, since it contains lactic acid, too! Any basic salt-pickled vegetable should be fine if you don't have sauerkraut.

I made this. The taste is the best thing about this. I love it. I think the aquafaba contributes a lot to the taste. Two points: 1 According to Google, 6 tablespoons of coconut oil is 82 g. I used that measurement and not all the oil got incorporated. Next time I'll try either less oil or more starch. 2 It didn't melt so well.

It is found that carrageenan produces cancer, please stay away from it, and read the ingredients list on the back of the labels of the products you buy because it is a thickening agent used in many vegan products such as ice creams, milks, and other desserts.
