High Protein Vegan Meal Prep – Split pea burgers and roasted beetroot hummus

5 portions:

2 kg / 4.5 lbs root vegetable (I used potatoes, parsnips and carrots)
625 g / 22 oz (8 dl / 3.5 cups) yellow split peas (soaked 8-14 hours and boiled 1 hour)
2 onions
4 cloves of garlic
2.5 dl / 1 cup parsley
2 tbsp grainy mustard
1 tbsp baking powder
1.2 dl / 0.5 cup cornstarch
1 tbsp dry thyme
salt
black pepper
oil for frying

Beetroot hummus
200 g / 7 oz (2.5 dl / 1 cup) cooked chickpeas
2 beetroots
Juice of one lemon
0.5 dl / 0.2 cup water
2 tbsp tahini
2 cloves of garlic
1 tbsp olive oil
salt

4 dientes de ajo
2.5 dl de perejil
2 cucharadas de mostaza de Skåne (o otra)
1 cucharada de levadura química
1.2 dl de maicena
1 cucharada de tomillo seco
sal
pimiento negro
aceite para freír

Hummus de remolacha
200 g (2.5 dl) de garbanzos cocidos
2 remolachas
Jugo de un limon
0.5 dl de agua
2 cucharadas de tahini
2 dientes de ajo
1 cucharada de aceite de oliva
Sal

2 gula lökar
4 vitlöksklyftor
2.5 dl persilja
2 msk skånsk senap
1 msk bakpulver
1.2 dl majsstärkelse (maizena)
1 msk torkad timjan
salt
svartpeppar
olja för stekning

Rödbetshummus
200 g (2.5 dl) kokta kikärtor
2 rödbetor
Juice från en citron
0.5 dl vatten
2 msk tahini
2 vitlöksklyftor
1 msk olivolja
salt

yeah I have 2 bags of split peas but I Don't want split pea soup so I'm definitely going to try this recipe. I'm missing a couple ingredients but once I get them I'll comment on how well I did & how they taste. TY for the recipe!!!
