Are these the BEST Fluffy VEGAN Pancakes??? 🥞

Could these be the best fluffy vegan pancakes? 🥞 Pancakes that are light and fluffy, but still made with simple ingredients! I have tried many, many different recipes without much success, until now! Hope you guys enjoy what I have found to be the best vegan pancakes.

🥞 Best Vegan Pancakes!
180g (approx. 1 1/2 cups) flour
2 Tablespoons cornstarch
2 teaspoons baking powder
1/4 teaspoon cinnamon (optional, but recommended!)
Pinch of salt
1 cup plant milk
3 Tablespoons maple syrup
2 Tablespoons vegetable oil
2 teaspoons apple cider vinegar
1/2 teaspoon vanilla
Optional: vegan butter for cooking
Combine dry ingredients in a bowl. Combine wet ingredients together (but separately from dry ingredients). Gently mix the wet and dry together until just combined (a few lumps are ok!). Heat a pan with some vegan butter (or oil) or use a non-stick pan. Once pan is hot, add 1/4 cup batter and cook until bubbles form and pop on the surface of the pancake. Flip and cook a few more minutes. Enjoy!

They look beautiful ♥️ I use the same exact recipe but minus the cornstarch and apple cider vinegar, and they come out delicious!
Adding some maple syrup to the mixture does add a nice flavour:)
We have a pan with four pancake holes and the pancakes become more fluffy inside! They’re smaller in width but more fluffy inside.
