Pancakes:
2 cups of flour
2 TBS baking powder
2 TBS sugar
1/2 tsp cinnamon
a dash of freshly grated nutmeg (1/4 tsp if using ground)
pinch of salt
1 1/2 cups + 1 TBS water
Add all the dry ingredients to a large bowl and whisk till combined. Add in the water and mix until there are no more dry pockets in the batter. There will be some lumps because it’s a thick batter, but don’t over mix, otherwise the pancakes will come out gummy instead of of soft and pillow-y.
To make the pancakes, ladle onto a non stick pan and spread the batter evenly into a pancake shape with the ladle. You have to do a little more work during this process since the batter is so thick. It’s not going to pour easily onto the pan. Once the pancakes start to bubble and are golden brown on the bottom, flip and cook for another 1-2 minutes on the other side.

I also tried allspice and cardamom and WOW . Best pancakes I’ve EVER HAD. I kept all the ingredients the same and added those two spices and I am shocked how amazing they were. I also topped the pancakes with black raspberries and sliced almonds 😍😛

I tried this now, and they are really fluffy and tasty. I added a few more sugar and also added apple vinegar and oil a little bit.
I love ur video thanks for ur creative energy. I add applesauce instead of sugar in my pancakes recipe. It gives it that extra vegan touch.
Now, I can not use sugar. Will that make a difference in the fluffy ( ness) ?

Impressive, im happy. When i added small fruit or chocolate morsels they didnt come out as fluffy than without. Any suggestions to avoid it? Thanks for video and any response

So I just tried the recipe and here’s what I found. It’s by far the BEST my vegan pancakes have turned out, and they work. But they are SLIGHTLY a little underdone in the middle :/
