YELLOW SPLIT PEA WITH ZUCCHINI / Yellow split peas recipe
Yellow Split Pea with Zucchini is a delicious Indian vegan and vegetarian curry. It’s easy to make, flavorful as well as high protein, which makes it a nutritious vegan dinner recipe. It is gluten-free, nut-free and soy-free.

What is Yellow Split Pea?
Yellow Split pea are field peas that are dried and their dull-colored outer skin is peeled and split in half by hand or machine at their natural split. They are high in protein and fiber and low in fat. This is what makes them highly nutritious and healthy meal options. Yellow Split Peas have a more earthy flavor in them. They make great curries and soup recipes.

Step By Step Procedure:
Cook yellow split peas al dente.
Heat oil and sauté mustard seeds and cumin seeds. Add onions and fry until translucent.
Add garlic paste, tomato, and all spices. Cover and cook for 5 minutes.
Once soft, add zucchini and water. Cover and cook until soft.
Next, add cooked split pea and let it simmer on low heat for 5 more minutes.
Garnish with coriander leaves. Serve, with rice or naan.
