Fancy easy, cheesy, vegan quesadillas? Then you’ll love this recipe! Our quesadillas are packed full of flavour and are easy to make.

These quesadillas are effortless, delicious and super cheap. Simply cook the filling ingredients together in a pan, add them to your tortilla along with some vegan cheese, fold over the tortilla and wait for the cheese to melt. We used black beans, sweet corn and kidney beans for our filling but feel free to switch this up to suit your tastes for your own quesadilla!

Cut them into little triangles and serve with guac and salsa. They’re incredibly moreish so try not to eat too many! These are great to have as party food or part of a Mexican feast with nachos, tacos or burritos. Delicious!

OMG! When I saw this recipe I instantly ordered your book. Your bol is now one of staples. I cooked these Quesadillas this evening and they were BANGIN’. I doubted the amount of tomato and threw in a tablespoon of vegan pesto and served mine with home made soya labneh and nutritional yeast in the absence of vegan cheese…hubby just had regular mousetrap on his. No room left for dessert.
