In today’s video I show you 3 easy plant based dump and go slow cooker recipes! The first one is Mexican style quinoa, the second one is cabbage and sausage, and the last one is bbq jackfruit tacos!

Crockpot Mexican style quinoa-
1 onion diced
1 bell pepper diced
2 cloves garlic minced
1.5 cups quinoa
1 14.5 oz can fire roasted tomatoes
1 cup frozen corn
1 can black beans drained and rinsed
1 tbsp chili powder
1/4 tsp black pepper
1/2 tsp cumin
2 cups water

Put everything in the crock pot and stir. Cook on high for 4 hours. Stir half way through. Check on it after 3 hours and make sure the quinoa isn’t burning on the sides of the slow cooker. I served mine with chili tofu and avocado.

Slow cooker vegan sausage and cabbage
2 small onions quartered
3/4 lb baby carrots
3/4 lb potatoes
4 veggie sausages ( I used Tofurkey brand Italian sausages)
1 head cabbage cut into wedges
1 vegan broth cube
2 cups broth
2 cups water
bay leaf
black pepper
cook on high for 5-6 hours. Stir occassionally.

BBQ shredded jackfruit tacos
1/2 onion sliced
2 garlic cloves minced
2 cans jackfruit drained and rinsed
1 can white kidney beans drained and rinsed
1 cup your favorite bbq sauce
1 cup veggie broth
1 tbsp chili powder
1/4 tsp black pepper

Put everything in the crockpot and stir. Cook on high for 4 hours. Use a fork to shred up the jackfruit. Serve with coleslaw on top. Alternatively you could shred up the jackfruit before you add it in to make it easier.

I'm a huge fan of Cauliflower and Chickpea Tacos. Dice up Cauliflower, add some chickpeas (season to taste), once done you can lazy mash it together then stuff it into the pocket of a tortilla nice and snug, with a topping of kaleslaw (Kale, carrot strips and radicchio). Top with a vegan crema, verde, and or pesto.
Another winner is: Yam covered with black beans and quinoa, diced baby bell peppers, diced jalapeno, diced pineapple, avocado, add a little cilantro and wet the mound down with a Jalapeno Lime dressing.

I don't mean to offend you but the vegan diet is divoid of nutrients. If I was to guess I'd say your taking supplements right? Just eat pasteurised eggs there nutritionally complete plus your recovery from dancing will improve.

Thanks for the recipes. As for me I will be trying the cabbage and sausage one. I don’t have a slow cooker but my electric pressure cooker has a slow cooker setting. As for the jackfruit, my son and I came up with a recipe for mock roast pork using the jackfruit. Rinse it, drain it and season it with Cuban seasoning( onion and garlic powder, cumin, oregano etc) put in a baking sheet or pan and bake for like 30 min then add some mojo to it and broil for 15 min. Serve with rice, black beans and sweet plantains. Wow. Cuban food is so delicious. Hope you try it. Tfs😊
