wtf i just made this and it was AMAZING!!! I’ve been terrible at making seitan before but the tofu and jackfruit were perfect in it. And that was when kneading by hand! Can’t wait to get a KitchenAid and make this for Christmas!

When I took the brisket out of the hot water I was not sold on the consistency. After sauteeing I definitely was. What a difference a few minutes in the pan made! I am going to make this style of seitan more often from now on. Thank you!
