Vegan Gingersnap Cookies | gluten-free holiday recipe

Today we are making vegan & gluten-free gingersnap cookies! This video is a collab with Caitlin Shoemaker (who created another awesome cookie recipe). The links to both recipes and Caitlin's video are below! ♡ Caitlin's Video: https://youtu.be/-5-PC-NukIw

♡ RECIPE:
1 cup almond flour
1 cup brown rice flour
1/2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp baking soda
1/2 cup softened vegan butter
2/3 cup brown sugar
1/4 cup molasses

Preheat oven to 375 F. In a mixing bowl, combine almond flour, brown rice flour, spices and baking soda. In a separate bowl, beat together vegan butter, brown sugar and molasses until list and fluffy. Add the dry mixture to the wet in 2 parts, stirring to form a dough. Roll 1 tbsp of dough into balls and place on a cookie sheet. Bake 10-11 minutes until golden brown. Let sit a minute or two before placing cookies on a wire rack to cool.

Noorul Naziha says:

james romeyn, ceo primeVibe says:

Hello, Caitlin! Great recipe! We baked these last month for New Years.  I use very little honey and maple syrup in my coffee and cereal, etc… so I thought the cookies were a tad too sweet. We are adjusting the recipe and will be using less jam and less syrup. We will likely triple the recipe, and with half of the dough use peanut butter, honey and unsweetened cocoa powder just for fun and because yesterday was Valentine's Day and we abstained from eating chocolates.  I would like to find a substitute for powdered sugar.  My father was a very good amateur baker and used powdered sugar to achieve that delicate look on pastries…it's an inviting nuance…I might use pulverized cashews to try to accomplish the same effect. 🙂

ITS MAMA LAND says:

Looking delicious . What can you replace tapioca flour with ? 😀

Hayley Stolzle says:

Hi. Yummy mix of flavors but I had issue with the cookies sticking to the pan. I didn't note a direction for lightly greasing or papering the pan. Did I miss something? What's a reason I could have had issue with sticking. Otherwise, I'll be trying to make these again. THANKS!
