I am mystified by the popularity of flax as an egg substitute. I have tried it several times and it simply doesn’t work. Perhaps it has the ability to bind, but it has no ability to build structure like eggs do. It will not help baked goods hold their form. All I ever ended up with was fallen muffins. Same with aquafaba. Total scam. Just because flax or aquafaba have the consistency of eggs, doesn’t mean they are a match for the egg’s properties.

So… to show how to make something vegan you steal an in-shell embryo from a chicken, crack it, and swirl the contents in a jar with a fork? Why?

Why did that egg have to be destroyed for this video?
What viewer would have been confused if that segment was omitted?
