Vegan stuffed cabbage rolls

Cabbage rolls are made mostly for Christmas or New Years eve, but it’s a traditional food at weddings in Hungary as well. We like to make it every time of the Year. This savory recipe is filled with delicious tastes and provides a fulfilling meal for the whole family.

Ingredients:
2 medium cabbages

For the filling:
1 onion
1 cup of coconut cream
3 medium carrots
1 bell pepper
16 oz baby bella mushrooms
2 cups of basmati rice
1 tbsp of Hungarian paprika powder
1/2 tbsp smoky paprika powder
1/2 tbsp marjoram
1/2 tbsp caraway seeds
2 tbsp of salt
2-3 cup of water

For the cabbage bed:
Left over chopped cabbage
2 cups of coconut cream
2 tbsp of Hungarian paprika powder
1 tbsp of smoky paprika powder
1/2 tbsp of hot smoky paprika powder
1 tbsp of salt
1 tsp of caraway seeds
1 glass of sauerkraut
1 cup of water
