New week new recipe. In this weeks video we show you how to cook vegan stuffed butternut squash. Butternut squashes are seasonal from early fall through winter and belong to the family of winter squashes. They taste sweet and nutty, are low in calories but loaded with nutrients and high in fiber and antioxidants. The stuffing contains out of brown button mushrooms, red lentils, leek and chestnuts. The flavor comes from all of the high-quality products we used in this recipe in combination with rosemary, thyme, salt and pepper. This recipe is also gluten-free.

Ingredients:
1 butternut squash
1/2 leek
100g or 1/2cup red lentils
120g or 4.3oz brown button mushrooms
100g or 3.5oz chestnuts (cooked and vacuum packed)
2tbs grape-seed oil
200ml water
rosemary
thyme
salt
pepper
