Vegan cornbread: Derived from Dana Sly Blue Ribbon Cornbread but I put an EPEC twist on in!
Flax Egg:
4 tablespoons ground flax seed
3/4 cup tablespoons water
Vegan Cornmeal:
2 cup all-purpose flour (can substitute with another plant-based flour, like spelt but remember to heed to the differences in substitutions)
2 cup cornmeal
1/2 cup maple syrup (can substitute with date syrup, raw cane sugar, or honey (honey is not vegan)
8 teaspoons baking powder
1.5 teaspoon table salt
2 cups of almond milk (can substitute with other plant-based milk)
1/2 cup canola oil (can substitute with other plant-based oil)
Additional Delicious ingredients:
1/2 Green pepper
1/2 Red pepper
1 cup Green onions
Jalapenos if you like spiciness!!
Directions
Flax Egg
2. Boil water in a small saucepan. Now add the ground flaxseed, reduce the heat to medium-low, and simmer the ground flaxseed in the water for 3 minutes or until thickened. Ensure you are stirring to prevent burning and sticking to the bottom. Once complete, Set aside.
Cornbread:
1. Adjust oven rack to middle position; heat oven to 400 degrees. Spray a 12-inch baking dish with nonstick cooking spray.
3. In a medium bowl, mix dry ingredients together. Whisk flour, cornmeal, baking powder, and salt until well-combined.
4. In a small bowl, mix wet ingredients together: Add the ground flax seed mixture, almond milk, maple syrup, and canola oil
5. Pour and mix the wet ingredients into the dry ingredients. Stir until smooth (do not overmix). Can use a blender on low speed.
6. Fold in additional ingredients (green onions, green pepper, and red pepper)
5. Turn into prepared baking pan. Bake for 20 to 25 minutes, or until a toothpick inserted in the middle comes out clean.

You can also use ground oatmeal. If you have some rolled oats you can just blend them down instead of using all purpose flour. And be careful with family and using non-organic corn products. Also be careful with canola oil it’s very unhealthy unless it’s a organic Expeller pressed.. thanks for sharing I can’t wait to try this. I think I’ll chop some jalapeños make a little spicy.🙏🏾
no need to heat flax seed and water. You've just destroyed the nutrients of the flax seeds. Oils with Omega three need to be raw and not heated.
Awesome recipe! Jenn you are such a scientist about this. I am familiar with flaxseed gel so it makes sense texture wise to use flaxseed as an egg. 🤔
