Pumpkin Puree – Cooking with The Vegan Zombie

Fall is here and it’s such a great time of year. Let’s start with the basics and make some pumpkin puree which we can use in many other recipes.

Pumpkin Puree
1 pie pumpkin
1/8 tsp sea salt
coconut oil refined
1 Tbs molasses (if making something savory go with veggie broth)
1 Tbs pure maple syrup (if making something savory go with veggie broth)

1. Break stem off pumpkin and cut in 8 smaller pieces.
2. Scoop out seeds and pulp and place the 8 pieces on cookie sheet with parchment paper.
3. Brush each piece with melted coconut oil and sprinkle sea salt on top.
4. Put in oven for 40 min at 450 degrees.
5. Let cool to room temperature about 30 min.
6. Scoop pumpkin away from skin and place in food processor. Add molasses and maple syrup. Substitute veggie broth if you are making a savory dish. Blend in food processor on high for about 1 min.

Love this … yet, what is the difference b/t a pie pumpkin and a jack 0 lantern pumpkin.. I guess i have a lot to learn… ratts! And can i use a blender.. rather than a food processor. pardon… I guess i really want to make pumpkin puree for my Zombie pumpkin muffins.. : D My daughter loves Pumpkin everything.. her birthday is this saturday. Fall is my favorite time of year too. Such beautiful colors, cooler weather and tasty comfort foods. What is not to love???—(well I guess for me it is that winter is around the corner lol) but other than that, fall is perfection. Love your energy–these videos always make me smile. I have seen the occasional pumpkin in the supermarket but they're pricy. I've also seen one pumpkin soup but it has milk in it so I can't have that obviously.

I might buy a pumpkin soon though. All the pumpkin hype is making me curious 🙂 Do you need one pumpkin for a pie?
