LAY HO MA!! Eggplants are really the underdog of veggies. They can seem intimidating, but can also be super delicious and simple to cook. Join me in this episode and learn how to make a delicious teriyaki eggplant recipe that is sure to become a weekly staple! Let’s begin.

Ingredients:
2 Asian eggplants
1 cup oyster mushrooms
2 tbsp soy sauce
2 tbsp maple syrup
1 tbsp rice vinegar
2 pieces garlic
1 small piece ginger
2 tbsp toasted sesame oil
1/2 cup water
1/2 tbsp white sesame seeds
few small sheets of nori (toasted seaweed)

Directions:
1. Roughly slice the eggplants into bite sized pieces
2. Peel down and chop the oyster mushrooms
3. Add the soy sauce, maple syrup, and rice vinegar into a bowl. Grate in the garlic and ginger. Give the sauce a good stir
4. Heat up a sauté pan to medium heat. Then, add in the sesame oil
5. Add in and sauté the eggplant for 4-5min
6. Add in the mushrooms and sauté for another minute
7. Add in the teriyaki sauce and water. Give it a good stir, cover and cook on medium low for 10-12min
8. Plate and sprinkle over the white sesame seeds and chopped nori
