Do you cut an 'x' before or after cooking them in boiling baking soda and water? Bc I saw an 'x' when she took them out of the pot but she said she cut the 'x' after she laid them on the tray ready to bake

Hello Caitlin ! Thank you for this delicious recipe again :q
I noticed you used oat for a gluten free version. But oat contains gluten.. It contains a different kind of gluten than wheat but still. Not everybody can support oat when they can't eat gluten so it's confusing to say that you can replace it.
