INGREDIENTS
3 tbsp olive oil
1 yellow onion
2-3 carrots
2 celery stalks
3-5 cloves of garlic
1.25 cup red lentils
1.5 tbsp smoked paprika
.5 tsp cayenne pepper
.25 tsp cumin
4 cups vegetable stock
salt pepper to taste
INSTRUCTIONS
1. preheat Dutch oven
2. chop onion, celery, and carrot then add to pot
3. cook until soft
4. add chopped garlic and stir constantly for 2-3 minutes to avoid burning
5. mix in lentils and spices
6. add vegetable stock
7. cover and bring to boil
8. once boiling, uncover and let simmer until the red lentils are soft
9. let cool and top with lemon, avocado, salt and pepper
