CAULIFLOWER FRIED RICE | FAST DINNER IDEA | EASY VEGAN RECIPES

LAY HO MA everyone! It sounds so strange to replace that delicious fluffy rice with cauliflower, but let me tell you…it is absolutely incredible! You can buy pre-riced cauliflower or do it easily at home. Join me in this episode and learn how to make cauliflower fried rice. Let’s begin.

Ingredients:
2 generous cups riced cauliflower
1/2 cup diced carrot
2-3 pieces garlic
3-4 tbsp grapeseed oil
1/2 cup frozen peas
1/2 cup frozen corn
1 tbsp sesame oil
2 tbsp soy sauce
1/4 cup fresh chopped green onion

Directions:
1. chop the cauliflower into small pieces. If using a blender, rice only a few at a time
2. blend the cauliflower on the lowest setting (do this in small batches)
3. chop the carrot into small cubes. Then, finely chop the garlic
4. heat up a sauté pan on medium high heat. Then, add the grapeseed oil
5. add the garlic, cauliflower rice. Sauté for 2-3min
6. add the carrot, peas, and corn. Sauté for 1-2min, then add the sesame oil, soy sauce, and green onion
7. sauté for another 1-2min. Serve and enjoy!
