VEGAN PANCAKE RECIPES
1 cup white whole wheat flour (sub 1/4 cup oat flour – super thin pancake – good flavor)
1 tablespoon baking powder
pinch salt
1 cup unsweetened almond milk
1 tablespoon maple syrup
1 tablespoon coconut oil
In a large bowl combine flour, baking powder and salt, mix together.
Add in the almond milk, maple syrup, coconut oil and stir until well combined. Allow the mixture to sit for 5 minutes so the baking soda has the to active. You will notice that the batter because light and fluffy, that’s how you know it’s time to make the pancakes.
Heat a large non-stick skillet over a medium-low heat and coat the pan with some coconut oil.
Scoop up 1/4 cup of batter and drop them into the pan forming small-medium sized pancakes. Allow to cook until you see small bubbles forming on the top of the pancake, gently flip and cook for another two minutes or until the pancakes are golden brown and cooked through.
Remove from pan and repeat until you have finished all the batter. Serve with your favorite pancake toppings and enjoy!
Makes 8-10 small pancakes. Serves 2.

Yumm yumm you nailed it. ❤️ I should probably mention that Spelt has gluten in it and it’s not safe as a gluten free substitute for celiac or gluten free diets. I wonder how Buckwheat would sub out, since that grain is actually free of gluten. 😋

I'm joining the anti-fluff faction. "Fluffy!" "So fluffy!" Wraps aren't fluffy at all. And they are super for gluten free sandwiches! Fluff is way oversold.

Tried it n only had whole wheat flour..fed didn't taste good n I could tast the b.p for some reason…added a mashed banana helped the taste alot…looks good though will have to try again
Thank you very much! Used molasses instead of maple syrup, 1tbsp ground chia seed, 1tbsp ground flax seed, and an extra tsp of baking powder! Very delicious!
Birch Benders makes a mix that is very simple. My only problem is with how hot the pan must be before the first bit batter goes in. Thanks for the spelt flour pointer. I was going with oat flour, and I'll see how that goes. I like the "thin like crepes" comment.

Danny, I made the trip to get ingredients I could not locate the tapioca flour so I substituted the flour with a Gluten free flour by Betty Crocker brand with ingredients that mention tapioca, omg goodness delicious I practically felt guilty thinking too delicious to be healthy lol I’ve already sent your video to my niece who is health conscious as well as I no she will enjoy. OMG YA' LITERALLY NAILED IT!!! My entire meat eating family found out AFTER I cooked and stacked them at the table…along with the delicious pancakes…they ate their words about me being vegan for almost 24 years.
Is it normal to taste this weird] chemical taste, I’m guessing from the baking powder? Even with the vanilla sugar (didn’t have maple syrup), and the spreads (jam or peanut butter) I still taste it. Any tips to change this?

I may sound like a total idiot but, does anyone know if this works when doubling the recipe? Sometimes when you double a recipe it doesn't turn out right but I have a big family and need to make more… please respond if you have tried doubling the recipe!!
