R E C I P E STATION:

Vegetable lentil rice bowl
Recipe for two

Ingredients
1/2 cup white rice
1/2 cup onion
1/4 cup mung beans
1.5 tsp oil
1 tsp cumin seeds
1/2 tsp paprika
3/4 tsp salt
1/2 tsp turmeric
1/2 tsp ginger paste
1 tsp garlic paste
1/2 cup chopped carrot
1 cup cauliflower
1/2 cup peas
3 cups water

Method
Soak the rice and mung beans for about 30 min . Put the instant pot in the sauté mode and heat the oil once it’s warm add the cumin seeds wait for a few minutes till they start to crackle . Add the chopped onions, garlic and ginger paste. Sauté for a couple of minutes then add all the vegetables cook for another three min. Now add the rice and moong beans abd mix well . Add all the spices and cook for another two minutes followed by about three cups of water . Close your instant pot and set it for 15 minutes on the rice mode.

Once the pressure is released, dush is ready. For our garnish I am using crushed papad. To make papad just put it in the microwave at medium heat for a min and it’s ready. Take it out and crush it onto to your bowl . To plate serve a generous helping into a bowl top with sliced tomatoes, some crushed papad , some plant based youghurt cilantro and squeeze some lime juice.

Crunchy mung bowl

Ingredients

1/2 cup Rice
1/4 cup yellow mung dal
1/2 cup Tomatoes
1/2 cup Onions
1 tsp Ginger paste
1 tsp Cumin seeds
1/2 tsp Paprika
3/4 tsp Salt
1 tsp Anise seeds
1/2 tsp Turmeric

Method
Put the instant pot in sauté mode. Heat the oil then add cumin and anise seeds let them sizzle then add onion and ginger paste cook till onions get translucent add the tomatoes all the spices cook for 2 to 3 minutes then add the Lentils, rice and then 2.5 cups of water. Mix well and close the pot put on rice mode for 15 min. While the rice lentil dish is cooking prepare the garnish.

Garnish mung bean salad
1/4 cup each of sprouted moong beans, chopped tomatoes and chopped onion. Mix everything together add salt to taste garnish with some lime juice and fresh cilantro.

Open once the pressure is released .open the instant pot. Serve the steaming food into a bowl garnish with chopped spinach, sprouted mung bean salad and a generous serving of any plant based yoghurt.

I love your recipe ideas but personally I never use stripped white rice I only use natural brown, red and black mix more nutritional and have protein not just a stripped carb. i worked with Hindu's in Toronto was a lovely memory, enjoyed dancing with their children, they made me curry dishes that were fabulous but it took me 30 years of researching to discover why I could not duplicate their curry dishes. One day in a book store I discovered curry means sauce! haha No wonder I cannot find it in a bottle. I did just discover my local health food store is now carrying different organic curry spices 3 from India and one from Morocco. I look forward to trying them out.
