Who says eating healthy has to be expensive? Here is a full week of healthy, delicious dinners for the whole family for under $5. I hope you will enjoy these recipes as much as we did.

Sweet Potato Curry

1 sweet potato
2 cups cooked chickpeas
1/2 cup frozen peas
1 can coconut milk
1 can diced tomatoes
1 tsp turmeric
1/2 tsp cumin
Salt and pepper to taste
1/4 tsp red pepper
1 onion
3-4 garlic gloves

Dice onion, mince garlic and sauté both in a bit of water
In the meantime cut potato into small cubes and add to pot
Add the rest of the ingredients, mix well and bring to boil
Cover and reduce to simmer. Cook for about 25 min or until potatoes are done
Enjoy

Bean Burgers and Fries

About 3 cups of cooked black beans
1/2 cup oats
2 carrots
2 tbs ketchup
1-2 tbs mustard
Salt and pepper to taste and any other spices you want to add

1 kilo potatoes
Salt

Preheat oven to 400 F

Mash about half of the beans in a bowl. Grate carrots into the bowl and add the rest of the burger ingredients, mix well.
Form burger patties and put on lined baking sheet
Cut potatoes into wedges and add to the baking sheet, making sure to keep just a bit of space between them, so they can get crispy.
Bake for 40 min. You might have to flip the burgers half way through, depending on your oven.

Fried Rice

About 3 cups of cooked brown rice
Vegetables of your choice – I am using 2 bell peppers, 1 broccoli, 1 can of corn
1 small block of tofu
3-4 garlic gloves
A bit of red pepper
Salt and pepper to tast

Mince garlic and sauté in a bit of water. Cut all other vegetables and add to garlic
Sauté everything for about 10 min, then add rice and cook a bit longer. Add spices
Lastly, crumble up tofu and mix everything well. Cook for a few more minutes, for tofu to brown just slightly.
Enjoy

Cauliflower/ Sweet potato Sabzi

1 cauliflower
1 sweet potato
2 cups cooked chickpeas
3-4 tbs coconut milk (or water)
1 – 1 1/2 tsp turmeric
1 tsp masala
1 onion
3-4 garlic gloves

Dice onion, mince garlic and sauté both in a bit of water
Cut sweet potato into small cubes and add to pot
Cut cauliflower into small florets and add to pot
Add the rest of the ingredients, mix well and cook until vegetables are done ( about 25 min)

Spicy Peanut pasta

1 onion
3-4 garlic gloves
1 bag pasta (I am using chickpea but this is really good with brown rice noodles as well)
1 pound or more brussels sprouts
2 heaping tbs natural peanut butter (or more if you love peanut butter as much as I do)
1 tbs or more sriracha
2 tbs soy sauce (I am using gluten free)
Hot water (how much depends on how thick your peanut butter is)
1/2 tsp garlic powder
1/2 tsp ginger powder
Peanuts for topping (optional)

Boil water for pasta
Dice onion, mince garlic and sauté in a bit of water
Clean brussels sprouts and cut into halves, add to pan
Brown brussels sprouts for about 10 min
In the meantime make a sauce out of the peanut butter, soy sauce, hot water, sriracha, garlic powder and ginger powder
Boil pasta
Once pasta is done, add to pan. Add sauce and mix well
Top with peanuts (optional)
Enjoy

FULL WEEK OF DELICIOUS & EASY PLANT-BASED FAMILY DINNERS UNDER $5//WFPB NO OIL//VEGAN//GLUTEN FREE

A few months ago I made a video on delicious family dinners under $5 and it seems like most of you loved it. So, here is another full week of delicious and easy family meals under $5. Of course, the $5 is an average, some meals are slightly over, some slightly under. And it also depends on where you live, but bottomline, all of these dinners are very inexpensive, easy to make and super satisfying.
All the recipes are below, enjoy and let me know which your favorite is.

Spicy Mexican Rice
3 cups cooked brown rice (make an extra cup for tomorrow)
3 cups cooked black beans (I make mine in my instapot, 5 cups cost less than $1 and it makes enough for another meal)
1 spicy pepper or jalapeño
5-7 fresh tomatoes or a can of diced tomatoes
Fresh, but cilantro or dried cilantro
1 onion
2 garlic gloves
1/2 tsp cumin
Salt and pepper to taste

Dice onion, mince garlic and saute both in a bit of water. Cut tomatoes into small pieces and add to pot. Add all other ingredients, mix well and simmer for about 10 min.
This is delicious as is or with some avocado on top. It also heats up well the next day.

Stuffed Bell-peppers
8 Bell-peppers
1 1/2 cup red lentils
1 cup cooked brown rice left over from the day before
3-4 tbs tomato paste
Fresh, cut cilantro or dried cilantro
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp sriracha or cayenne pepper
1/2 tsp cumin
Salt and pepper to taste

Preheat oven to 375F
Cook lentils in 3 cups of water of vegetable broth for about 15 min or until done. In the meantime cut top of bell peppers and take out the seeds.
Once lentils are done, mix all other ingredients and stuff into bell peppers. Bake on lined baking sheet for about 30-40 min, depending on your oven.
These heat up really nicely the next day.

Sweet Potato/Chickpea Bowl
2 big sweet Potatoes
Bell pepper or any other vegetable of your choice
2-3 cups cooked chickpeas (I cook mine in the instapot)
Cumin, turmeric and chipotle chill or any other spice you prefer
For the sauce
2 tbs tahini
1 tbs maple syrup
Juice of half a lemon
1 tsp sriracha
A bit of hot water

Preheat oven to 375 F
Cut potatoes into bit sized pieces and put on a lined baking sheet. Cut your vegetable of choice and add to baking sheet. Add chickpeas. Spice chickpeas to your liking with above spices or spices of your choice
Bake for about 25-35 min or until potatoes are slightly caramelized
In the meantime mix all sauce ingredients until you get a runny consistency.
Once potatoes are done, put in a bowl, add chickpeas and vegetables and top with sauce.

Red Lentil Tacos
1 cup red lentils
1 cup water
3-4 tbs tomato paste
Fresh cut or dried cilantro
1 onion
3 garlic gloves
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp cumin
1/4 tsp cayenne
Lettuce leaves or totalities
Toppings of your choice
1 can diced tomatoes

Dice onion, mince garlic and saute both in a bit of water. Add all other ingredients, mix well and simmer for about 15 min or until lentils are done.
Add mix to tortillas or lettuce leaves, top with toppings of your choice. This mix freezes well and can also be turned into a delicious tomato sauce.


Loaded Sweet Potato
2 big sweet potatoes
2 cups cooked black beans (leftover from Monday)
1 avocado
Left over tahini sauce from Wednesday

Preheat oven to 400F
Cut sweet potatoes into wedges and put on lined baking sheet.
Bake for about 30 min or until caramelized.
But potatoes on a plate, top with beans, avocado and sauce.

Coconut milk is not a whole food and contains a lot of unhealthy saturated fats. But it's easy to put a fistful of cashews in a blender with water to get a rich and creamy whole milk. You don't need many nuts to get it very creamy.

Fresh chickpeas are the best. I make mine in my ninja foodie pressure cooker…They do say cod rice is best for stir fry. All these look so yummy. Our cauliflower goes up to six bucks some times. I buy frozen. May have to try these. Specially the Cauliflower with chickpeas… Rice noodles are yummy. That looked really good. And I don't care for Brussels. May have to try it again though…Taste buds change. 😊
