I’m back with another lazy vegan recipe video! Today I’m sharing with you 4 super simple meal ideas – there’s nut free vegan mac and ‘cheese’, avocado pizza quesadillas and healthy rice noodle and sweet potato bowls. Hope you enjoy!

INGREDIENTS:
#1 Avocado & Bean Pizza Quesadillas
2 tortillas
1 tbsp hummus
½ avocado
a handful of red kidney beans (or a lot more guys I’m sorry lol)
1 tbsp nutritional yeast
a squeeze of lemon juice
2-3 tbsp marinara sauce
*serves 1-2
#2 Lazy Lentil Dhal with Rice Noodles
1-2 onions, roughly chopped
1 tsp garam masala OR: ½ tsp turmeric, ¼ tsp cinnamon, ¼ tsp cumin, ¼ tsp garlic powder, 1 dash of black pepper, ½ tsp dried ginger
1 cup red lentils (200g)
1 tbsp tomato purée
2 cups veggie broth (500ml)
1 can coconut milk
a splash of water
½ cup marinara sauce (125ml)
salt to taste if needed
a handful fresh basil or parsley
200g rice noodles (7oz)
2 handfuls baby spinach, optional
→ serves 2
#3 Roasted Sweet Potato Chickpea Bowl
1 medium sized sweet potato
1 onion
1 bell pepper
1-2 tsp coconut oil
½ tsp dried herbs
salt to taste
juice of ½ lemon
½ cup chickpeas (120g)
2 handfuls of fresh spinach
fresh basil
hummus, lemon juice for serving
→ serves 1
#4 Vegan Mac and Cheese
1 tbsp vegan butter
1 ½ tsp flour
¾ cup non dairy milk – ¼ cup at a time (180ml – 60 ml at a time)
2 ½ tbsp nutritional yeast
1 tbsp fresh lemon juice
salt, pepper to taste
1 tsp miso paste, optional (for instance mugi miso)
1-2 handfuls of grated vegan cheese – one that melts!
225g pasta (7,9 oz)
→ serves 2

Does anyone know of any vegan mac and cheese pasta WITHOUT nutritional yeast?

That red lentil thing we call it as dhal ,parupu and many other names in India. We eat it at least once a week here. Like we don't use red lentils that much but we do use yellow ones. If you want a Spicer version. Try a recipe called Andhra pappu. You can add that to add to rice, tortilla (chapati), rice pancakes (dosa), rice cakes(idli) and many other dishes too.
