Malai Kofta: Potato & cheese balls in sauce

Potato & cheese balls: This recipe will make about 9 balls

Ingredients:

1 cup boiled peeled and mashed potato
1/4 cup onions finely chopped
1/2 tsp garam masala spice
1/2 tsp cinnamon
1/2 tsp tumeric
1/4 cup mashed green peas
1/4 cup vegan cheese
3 tbsp cornflou
1/2 cup almond flour
1 tbsp nutritional yeast
3 grated cloves garlic
1 large chunk grated ginger

handful of chopped coriander

To a bowl place all ingredients and knead with your hands until all ingredients are combined. Place on baking tray lined with parchment paper and bake for 25 minutes at 200 degrees celsius. Don’t forget to flip your balls half way through baking time.

Kofta Sauce ingredients:

1/4 cup coconut oil
1 tsp mustard seeds ( I made a mistake in the video and said 3 tbsp! We only want 1 tsp of mustard seeds in this recipe.)
1 cinnamon stick
1 dried red chili
1 large chunk of ginger cut into small pieces ( you don’t have to grate the ginger as it will be blended in the blender.)
4 cloves of garlic roughly chopped ( no need to grate it)
1 roughly chopped onioin
1 tsp cardamom powder ( another mistake everyone! Not 2 tsp! We only want 1 tsp of cardamom in this recipe.)
1/2 tsp salt
1 tsp garam masala
1/2 tsp cinnamon
1 tsp tumeric
1 cup tomato sauce

400ml can coconut milk. we only want the cream in this recipe so i suggest you refrigerate over night so that the cream separates from the liquid and then use all the cream and discard the water.

1/2 cup cashews soaked in hot water

soak the cashews in hot water for 15 minutes. discard water and place cashews in blender along with 1/4 c+ 1 tbsp water. blend until smooth and set aside.

To your frying pan place the oil, mustard seeds, cinnamon stick, dried red chili flakes, ginger, garlic and let cook for a few minutes. Then add the onion, cardamom, salt, garam masala, cinnamon, tumeric and let cook for another 3 minutes or so. Finally add the tomato sauce and cook for 5 minutes. Remove the cinnamon stick from the pan and place all the sauce into a blender along with 1/2 cup of water until smooth and creamy. Add into the frying pan again and cook on low heat. Finally add in the cashew nut cream, and coconut cream. stir and let cook on low for another 5 minutes stirring constantly until the mixture becomes thicker and creamy from the cashew nut cream. At this poinit if it needs more salt you can taste it and add in anything that you desire. Turn off the heat and add in the potoato cheese balls and sprinkle on some corander leaves.

Jeera Aloo recipe: potato and cumin

Ingredients:

3tbsp vegan butter
1 tsp coriander seeds
1 tsp mustard seeds
3 small red chilies
chunk of large ginger grated
3 cloves grated garlic
1 tsp tumeric
1 tsp cinnamon
1 tbsp cumin powder
1 tsp garam masala
1/2 tsp salt
4 boiled and peeled large potatoes
fresh coriander leaves
mint yogurt ( vegan yogurt with mint leaves.)

cut your pre boiled and peeled potatoes into large or small pieces and set aside.

To your frying pan add butter, coriander seeds, mustard seeds, fresh red chilies, grated garlic , grated ginger. Fry for a few minutes on high heat stirring continuously. Add in the tumeric, cinnamon , cumin,garam masala, 1/2 tsp salt. cook for a minute and then add in the potatoes. mix until all potatoes are coated in spices. Turn off the heat. add some fresh coriander leaves and drizzle on some mint yogurt.

Mint yogurt recipes:

2 cups vegan yogurt
1 handful mint leaves

Mix in the blender until smooth. Drizzle on your potatoes.

Samosa ingredients:

For the filling:

cumin seeds
coriander seeds
mustard seeds
large chunk of ginger
4 cloves garlic
3 boiled and peeled potatoes
1 cup peas
1 onions
green chili flakes
salt
garam masala
cardamom
pepper
coriander leaves
olive oil

dough:

2 cups all purpose flour
¼ cup olive oil
1/3 cup water plus

Vegan Indian Recipe - Samosa (Granny Mastanamma)

How to make this delicious, traditional indian style Samosa! This recipe is inspired by Granny Mastanamma in India. The recipe is very easy, all you have to do is follow my steps in the video.

Did I mention these Indian Samosa's are the bomb? They are super delicious and can be fried or baked! Taste is equally good!

Samosa ingredients:

For the filling:

cumin seeds

coriander seeds

mustard seeds

large chunk of ginger

4 cloves garlic

3 boiled and peeled potatoes

1 cup peas

1 onions

green chili flakes

salt

garam masala

cardamom

pepper

coriander leaves

olive oil


dough:

2 cups all purpose flour

¼ cup olive oil

1/3 cup water plus


Mix flour and olive oil. Then add water. If it seems a little dry go ahead and add an extra tbsp of water until you get the right consistency. Knead for 5 minutes and place in a bowl covered with a lid.


To a pan add oil, cumin seeds, coriander seeds, and mustard seeds cook for 2 min until they pop. Then add masala, pepper, salt, cardamom,chili pepper flakes. Then add grated garlic ginger and onion. Cook for a few minutes. Add the coriander leaves, the frozen peas and then crush the potatoes with your hands into the frying pan. Cooke for a few more minutes. Set aside to cool while you roll out the dough.


Take a piece of dough and massage it in your hands for a few seconds. Place it on a clean surface. Place some parchment paper on top of the dough and then use your rolling pin to roll out a circle. Then cut it in half. See video on how to make samosa pocket. Or if that is too difficult simply place the filling in the center of the dough and then fold over the one side of the dough and close it up with your fingers or with a fork.

If you are going to bake these then place the samosas on a baking tray lined with parchment paper and brush both sides with olive oil.

Bake at 210 degrees Celsius for 25 minutes.


To fry the samosas: to a pot add sunflower oil, enough to cover the samosa. When the oil gets very hot place the samosas inside until golden brown. You'll know the oil is ready if you place a piece of dough inside it should immediately bubble. Remove from oil when golden brown and on to a place lined with paper towel or parchment paper.
