VEGAN PACZKI RECIPE

FULL MODIFIED RECIPE
Ingredients
7 cups of all purpose flour
1 cup of raw cane sugar
1 cup of soy milk combined with 1 tbsp. of apple cider vinegar
1/4 of anise extract
1/4 of almond extract
9 tbsp. of Just egg substitute
3 tbsp. of aquafaba
salt to taste
2 envelopes of dry yeast( one envelope contains 7 oz of dry yeast)
3 tbsp. of coconut oil
Canola oil for frying
1 small jar of triple berries preserves, or preserve of your choice

Directions
Place milk mixed with apple cider vinegar in a pot with hot water. Keep it until warm.
Place all the ingredients in a bowl and stir them well. Then, work them with a hand. Transfer your mixture onto a counter that was sprinkled with flour. Work your mixture until smooth and elastic. Afterwards, add oil and work for little bit longer until it is absorbed by your batter. Place in a bowl sprinkled with flour and let it rise in a warm spot of your kitchen until it is double in its size( I did for about 2 hours).
Sprinkle your counter with flour. Tear off a small pieces from your batter. Flat each of them forming a circle and place berry preserves in a center of each of them. Bring their edges together and seal them in a way convenient to you. Then, form a ball from each .Line up them on counter allowing to rise for a little bit. When all done, you should start frying them and begin from the first row since they had a time to rise. Put 6 paczki in a hot oil( use medium heat) and fry them on each side. Transfer them onto a paper towel until grease soaks in a paper. Top each paczek with a powdered sugar.
