► Roasted Cauliflower Chowder:

► Vegan Cranberry Orange Muffins:
► Vegan "Honey" Mustard Dressing:
3/4 cup raw cashews, soaked
1/2 cup yellow mustard
2 tablespoons maple syrup
1/2 teaspoon garlic powder
1/2 cup water
Drain and rinse the soaked cashews. Place all of the ingredients into a blender and blend until smooth. Add more water if needed. Taste and adjust the flavors as desired, adding more mustard for tanginess or maple syrup for sweetness.

This all looks really lovely and I like that despite your toddler saying she didn’t like the quinoa she was still willing to try it, I think that’s great! 🙂
I liked the variety of foods that you made, and they were all normal simple things but very wholesome and nourishing, the muffins especially looked very light and fluffy despite being made with wholemeal flour and oat flour, will have to give them a try. Thanks 🙂

What could I use instead of cashews in the dressing as I’m allergic to cashews?

Good question! My first thought is unsweetened non dairy yogurt or vegan mayo. If you use one of those, then you may not need as much or any water…just whisk the mustard, maple syrup and garlic powder into the yogurt or mayo! Let us know if you find a good cashew substitute!
