Hi everyone!! So excited to get to know you all better! Here are the measurements written our for y’all 😋 Remember to adjust to your own taste and feel free to experiment with adding diff veggies!

Kimchi Jjigae
1 tbsp oil
1 onion
5 cloves of garlic
2 box tofu
5 cups kimchi with juice
3×6” sheet of Kelp
4-6 Shiitake mushrooms
1 tbsp gochugaru
1 tbsp gochujang
1 tsp salt
1 tsp sugar
2 tsp sesame oil
3 green onions

Japchae
1 pack sweet potato noodles
1 zucchini, shredded
1 carrot, shredded
1 yellow onion
7 shiitake mushrooms
– Slice thinly
– 1 garlic clove, minced
– 1 tsp sugar
– 1 tsp soy sauce
– 1 tsp sesame oil
3 garlic cloves
1 tbsp toasted sesame seeds
1 large handful spinach – blanched
– 1 tsp soy sauce
– 1 tsp sesame oil

Hot and Spicy Rice Cake with Ramen (tteokbokki)
1 pack cylinder rice cakes
4 cups of water
1 Carrot, thinly sliced
4 Green onions, 2 inches long
1/2 White onion
2 3×5” sheets dried kelp
3 cups cabbage, roughly chopped
4 Shiitake mushrooms, thinly sliced
4 tbsp Gochujang
1/2 tbsp Gochugaru
2 tbsp Sugar
2 tbsp Soy sauce
3 Garlic cloves, minced
1 instant noodle pack

You don’t actually need iodized salt if you use sheet of kelp for your cooking which contains much more iodine than recommended daily intake (2000%)

@Pratima Rao Such an uninformed (spreading misinformation) comment from an Indian .. Understandable if you are from AP /Telangana state which are meat eating states.

Otherwise your statement is so wrong . Most of the Indian sabzi(vegetable based “curry”- as they call in west) food are vegan.. If you are not fan of Indian sweets(which are mainly milk based) and Paneer (which is not a day to day vegetable sabzi -only a restaurant item) all are vegan items and it should be very easy to be vegan. You just have to avoid Indian sweets and Paneer based menu.
Which world in India do you live??? i live in M.P and I am vegan and it is just soo easy. May be because M.P .Gujarat, Rajasthan . U.P and Bihar ( and maharastrra and Karnataka to some extent) are mostly heaven for vegans as well as vegetarains. But recent servey found AP Telagana are on top of meat eating.
So next time, do not spread misinformation. (Informed Vegan Indians also come to watch channels-remember that)
Regarding Ghee – someone commented being in Indian dishes – is very rare. It has long been abandoned . If you are eating out,You wont find any vegetable sabzi item made in Ghee in a restaurant. If it is they will mention it. Like “Ghee ka paratha ” etc . This is Because Ghee is not cheap. It is way more expensive than vegetable oil.

@재인- Zain yup, I lived there three years and love Korea. But it is super tough eating out. Even after being super specific, and saying no meat, seafood, egss, anchovies, fish sauce, etc., a dish still comes out with seafood broth, kimbap with imitation crab, shrimp paste in kimchi, etc.

For the Japchae, you can also use gluten free tamari. Tamari is made the same way as regular soy sauce just minus the gluten. In my opinion it taste much better than using liquid aminos.

I’m not a Vegan or a vegetarian but I definitely have those days or sometimes even weeks where my body just does not want any type of meat or dairy idk why that is happening but I dont mind it🤷‍♀️ so these recepies are so helpful thank you! 🙂
