I finally made them! i used light spelt flour made by the Canadian Mennonites! And wanted to use up this massive bag of coconut sugar! Even though I have a Kitchen aid mixer, I cheated! I decided to be a hero and do my arm work out whipping this up! Plus the ladder was in the freezing garage and there is no way I was gonna reach it! The cookies turned out Amazing! Now that the snow storm is over… I'm going to Dollarama to get the piping bottles and sugar! Well maybe at food basics I'll get the non-GMO sugar! xxoxoxoxoxoxoxo Thanks guys! PLANTS RULE!

I made these today and they came out beautifully! I used miyoko's vegan butter. While working with the batter, there were multiple points where I thought it was going to be a flop, but they came out really well! So if the dough is doing anything unusual, just keep persevering heheh

Hello, everyone! My boyfriend is allergic to eggs so a lot of times I have to find a vegan recipe for my first ever gingerbread cookies. And so I just made them and they are sooo amazing, delicious and exactly how they have to be. My boyfriend is in love with them and I can't wait to make them for Christmas!! I decided to make them a bit heathier by using wholegrain flour instead of all-purpose flour and I used 2 tbsp of honey instead of molasses. The dough was soft to handle even after getting it out of the fridge. That's why I put some water and everything was fine. Thank you so much for that easy to make and great recipe! Have a lovely Christmas time! ♥

I slip the recipe in half since I only had 1.5 cup brown sugar and accidentally put 1.5 cup of butter 0-0 BUT it's ok because it still formed into a ball it was soft and the cookies still came out
