I love taking dishes that usually have meat in them, and making them plant-based! These Vegan Eggplant “Meatballs” are so delicious and hold up so well in a marinara sauce. I always salt the eggplant and leave to drain for about 15 minutes and squeeze them dry before frying to make it less watery when blended up, plus it soaks up less oil when cooking like that too. I also like to put half breadcrumb/half course 'breadcrumbs' from my sifted wholemeal flour I keep to one side too.

This looks delicious. I want to try it but I dont have access to nutritional yeast! Is it necessary to just add the bread crumps and the spices? Or it has to have eather cheese or nutritional yeast
I can replace the yeast with cheese?
You should never put anything hot in the food processor it makes the knives blunt and damages the machine.
