I just made this and it smelled amazing when the bread was in the oven, the crust was really thick and seemed perfect at first. I let it sit out on a wire rack for about 2 hours before cutting into it and instead of a crunchy crust it had softened completely. Any tips on what I did wrong?

Ok. When I tell you that I cannot bake to save my life? Lol I tried this recipe but halved it. I got discouraged when my dough didn't look as soft and springy as his but continued anyways. My dough was still lightweight but it felt a little hard around the edges. I put it in the oven for a little less than the recommended time and it came out good!! I thought it was going to be dry since the dough was hard but it was still soft and fluffy. Thank you so much gaz! You're giving me confidence in my baking and I can't wait to modify the recipe!
