I got a new cook book and couldn’t wait to try out this vegan mac and cheese recipe. Most videos I’ve seen use Daiya. If you detest that cheese as much as I do, then this is the recipe for you. Team Follow Your Heart!

Shopping List:

6 cups macaroni noodles
1 cup unsweetened almond milk (Sprouts store brand)
2 cups vegan half/half (Ripple)
4 tbsp flour
1/2 cup vegan butter (Melt)
****plus approx 1 tbsp for noodles***
1 cup sour cream (Tofutti)
1/2 cup cream cheese (Tofutti)
4 cups vegan cheddar (Follow Your Heart & So Delicious)
***plus approx 1 cup for topping***
2 slices vegan smoked gouda (Follow Your Heart)
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp pink Himalayan salt
1 tsp pepper
1 tsp garlic salt (for noodles)

I made this and left out A LOT. I left out the sour cream and cream cheese because they went bad and I didn’t have any half and half. I also didn’t have smoked paprika but I had a tube of Hungarian paprika paste. Oh and I didn’t bake it, I just left it on the stovetop. My omnivore family still loved it, couldn’t tell that it was vegan, and want me to make it again!

Looks delicious. You have to try Daiya’s “Cutting board shreds” edition of cheese. It is the best vegan cheddar and nothing like the original Daiya which is gross. I’m going try this! Looks bomb and black af.
