Just watching this video now realizing it was released on my birthday. 2020 what a year.
I would love to see you shoot a day of eating that was diabetic friendly based on ADA recs. So for men that would be meals under 60 carbs and for women under 40 carbs with snacks under 15. I am struggling with blood sugars since going vegan and I would love more ideas to keep this sustainable.

Great video! Only suggestion is limiting spinach. It's super high in oxalates. Check out Dr. Greger's video about oxalates.

Looks delicious; lunch and dinner
I recently made the lentil enchilada pasta from FOK app and it was so amazing!! My whole family enjoyed it and I don’t make anything else like it! Dying to try more of your recipes now.
I've been roasting garlic cloves whole in a baking dish without oil at 350 degrees for an hour, and it comes out perfect (for anyone oil-free). Just don't cut the top off. 😉
You should try the zucchini hummus recipe ! Saw a video where they cut zucchini in piece and cook them in a pan, when soft they blend it with tahini salt and lemon. I cant eat chick peas because of my IBS and dont like chick peas so definetly want to try the zucchini humus.
1 cup diced zucchini (peel if you like)
1/3 cup raw tahini
2 to 3 tablespoons fresh lemon juice
1 to 2 cloves garlic , minced
1/2 teaspoon sea salt or to taste
2 teaspoons ground cumin
Raw garlic all the way for me! Lots of it, too. 😀 If my breath stinks, I can live with that! xD
