I love plantain! Here in the Caribbean we use a lot of plantain.
@Flaming Basketball Club absolutly and they are realy versetile, the green ones are not sweet at all and bind greatly. They get used similar to potatos but I like them better. Yellow ones are banana sweet, but former and hold togeather more nicely, black ones are realy realy sweet and the closest to banana in texture . . . . In general they are way starchyer than bananas and fill you up nicely
@Ariane Rainsinger you’d find them in any Afro-Caribbean shop. You can eat fried plantains with a rice dish, beans or lentils stew. A popular way in Nigeria is fried plantains and scrambled eggs

Oi from Puerto Rico here, I would say my favorite dish is mofongo. Would like to see it in vegan version.
That’s what I was.looking.for!!! Someone at work, from PR, brought some to me to try. OMGosh, fantastically delicious!
I was craving pastelon but was feeling lazy so I made canoas instead-split the plantain down the middle but not the whole way thru so that it looks like a canoe fry it making sure to get hot oil in the middle so that it cooks in the middle then when it’s done you fill it with the “meat” add cheese if u want and enjoy! They’re so good!
I’m sure the vegan meat was seasoned. But for a true P.R “pastelon”, I will use “sofrito” and a Sazon for seasoning.
