A little late to the party but after watching this video yesterday I was so excited to make this! It was awesome! I never cooked with leeks before but you explained everything so well and followed recipe to a tee. The only thing I would do is skin the potatoes next time because even after blending there were some bigger pieces I didn't care for. Nonetheless it was soooo good and comforting. Added probably 8 cloves of garlic. I made the brucheltta as well, great combo especially toasting the bread and dipping into soup!

This dish is absolutely wonderful! VERY easy to make. Better with Veggie Broth than Chicken Broth, in my opinion. There is one "cheat" I tried…I served my bowl and added a Tablespoon of butter…which makes it not Vegan…but it adds a layer of richness that is delish. Great recipe, thank you.

nooooooo dude you wasted so much delicious parts of the leek!! Cut at about 1-2 inches after the green starts. Wash dry and freeze the rest for a Star role in a delicious veggie stock!

Looks great,however how do you make sure that the veg has been grown chemically and not organic ?

Simple scalloped sweet potatoes and leeks! Roast seasoned layers or stacks on a lined sheet tray in a 350-400° f oven till it starts browning, add favorite vegan cheese if desired or any of a trillion sauces.
