GNOCCHI PESTO WITH SAUTEEED ITALIAN VEGETABLES
Serves 3

Ingredients:
1 lb (450 g) package of gnocchi
1 tbsp (15 ml) olive oil
1 red pepper, diced
1 zucchini, diced
½ cup (75 g) of red cherry tomatoes, sliced in half
1 clove of garlic, minced
¼ cup (60 ml) of pesto
salt and pepper to taste
¼ cup (22 g) freshly grated Parmesan cheese
2 tbsp (30 g) fresh basil, roughly chopped

METHOD:
Set a pot of hot, salted water to boil, cover with a lid to help boil faster! Meanwhile prep the “Italian Vegetables” vegetables.

Sautee in batches starting with the pepper first for 2 mins, then the zucchini for 2 mins and then the tomatoes.

Once vegetables soften, add the garlic cook for 1 min, then add the pesto, combine with the veggies and season with salt and pepper to taste. Keep warm over low flame.

At this point if sauce appears too thick, go ahead and add some pasta from the boiling gnoochi to thin it out.

Then drain the gnocchi, add it to the veggies stirring to coat. Portion out into bowls, top with the parmesan cheese, and freshly chopped basil. Et voila dinner is ready in under 15 mins!

        I just made this for my meatless Monday night and it was delicious! Even my husband (major carnivore) said it was really good. Th only gnocchi I could find in my grocery store were ones you fried in a pan but I just followed the directions on the package and tossed them with the veggies. Thank you !!!!

        You’re supposed to trim out the white pithy part of the pepper as that can cause indigestion because it’s not digestible, That’s what I was told.

        I love your recipes. Please keep making them. I do have to share a tip about not using hot water from tap. he reason is that hot water dissolves contaminants more quickly than cold water, and many pipes in homes contain lead that can leach into water. … It also warns that boiling water does not remove lead but can actually increase its concentration. Sorry it was not to dismiss your tip of using hot tap water. I had to share it with you and your viewers for everyone's good health. Thank you.

        Want vegan pesto that taste cheesy? Add nutritional yeast!!

        Also: most gnocchi has an egg or two in it, but you can buy it vegan OR just make it (it’s too easy!)

        I would oven roast those cherry tomatoes and add pinenuts at the end. That way you're getting a sweetness from the tomatoes and a crunch from the pinenuts. Adds a bit of time though!

        Looks amazing but your supposed to use cold water for boiling not hot or warm water.
