INGREDIENTS:
CAKE:
550g self-raising flour
300g caster sugar
2 teaspoons baking powder
200ml vegetable oil
Zest of 2 lemons
Juice of 1 lemon
340ml cold water
GLAZE:
85g icing sugar
Juice of half a lemon

It's a great recipe. I added some soy milk as well. Gives it a slightly nutty flavor. And I added some raspberries to the final lemon drizzle.

Ok, so I made this cake this morning, I took a HUGE risk cause…
I doubled the size- instead of 550 grams of flour, I went 1kilo= 1000 grams, cause I do not have a 7" cake pan…. I have only an 11". I thought or felt like something was missing in the dough, cause it didn't look like what had before putting it in the cake pan.
I went to around 3/4 or even less cup of plain sugar. (I do believe that if I would have used darker sugar or even 1
2 stirred bananas with a bit of any kind of milk, it would have gotten sweeter. I ONLY say this by experience) and I do feel or know by taste, that when the 'plainer or the whitest" sugars we put in, the less we feel the sweetness in out mouths, therefore we put more of white sugarto feel it). I doubled the "sauce"- orange juice and lemon to the mix. Instead of putting 1 lemon juice, I put around half a cup of lemon and orange juice, I think the lemony taste got lost in, cause I didn't add enough zest, although I put 4 or 5 table spoons, next time, I'll get it right lol.Anyways, I tried not to think about it too much, and put in the oven as you said. ( my oven is more wider than bigger by height) So I put it on 150 celius for 55 minutes. I went back to look at this video, and then said "shit".. I forgot to add oil to the mixture…LoL!!
So after about 2 minutes of it in the oven, I took it out, added bout 1/2 cup of oil, stirred it as much as could, and put it back in the oven as quick as I could. I also added poppy seeds- around 12 table spoons while adding the wet with the dry. ( dry ingredients before- then adding wet) I wanted a larger cake, not by height. ( my dad has problem with sensing food- his only taste- is for sweets), so I multiplied the indg..
I did put less granulated sugar for the topping- about 2 and half third of granulated sugar with 3/4 of of lemon and orange juice.
The layer of my aluminum foil, was not good. I suppose it was because the height of my pan, was low.
Therefore, I took it off, landed it back in the oven for another 10 minutes- without the foil.
I gotta tell you, I am amazed how it turned out!
