I made this for dinner tonight with quinoa and it is so yummy. It was super easy to make. The only difference is that I made it in the crockpot on high so it would be ready by the time I got home from the gym. I also used canned garbanzo beans that I rinsed to remove excess sodium.
YAY!!!!! I hope you love it as much as I do. Yum! Now I want to make some too! I will be soaking some garbanzos today. Have a great, great day my friend!

Ha ha..mine is ready! I had all the ingredients except fresh toms,so I added half a tin of canned ,chopped ones to the skillet.It smells delicious and the cumin tastes great in it.Am leaving it to sit a couple of hours to incorperate all the awesome flavours until dinner time. I may just serve this with crusty bread. x:)

Looks great! I don't normally eat two starches in one dish, but the two (sweet potato & rice) actually compliment each other. Thank you!
Chickpeas are great for the health of men (prostate) and so filling and not fattening for we females! I find they take time to soak and prep but I do like them. Almost everyone seems to be able to eat them, with no gas or "bean problems," if I may be so direct. They are generally very inexpensive in dried form. I never use them canned. It just takes a bit of planning. Uprated!
