Since its inception in 1993, Chipotle has been generous with its vegan options. Plant-based patrons could always rely on a solid meal of rice, beans, fajita veggies, salsa, and guac for the first 20 years of this chain’s existence, but in 2013, Chipotle introduced the vegan sofritas—a game-changing option of spicy braised tofu. I tried it today with regular thin spaghetti and sunflower avocado oil. I added a little too much water, so I drained it. But it was still yummy!

This is my favourite pasta recipe. I used to cook pasta and garlic separate, but the way you do it, pasta gets more creamy. Thanks.

TrippySatine says:

Italian here 🙂 So…I'd totally recommend to cook the pasta separately from that pan and then once cooked mix it with the oil and garlic. Us Italians never ever cook pasta like that 🙂

Catarina Menezes says:

THIS is what I needed! I have nooo ingredients at home and I'm too lazy to go out, thanks for saving my day 😛

Elisa D says:

The original recipe is aglio, olio e peperoncino, but of course you can avoid chili pepper. But…what in the world is that?? 😀 You are so fun Rose, I like your videos, but as an Italian I must tell you that you should never cook pasta like that, it's a sin! 😉 (just joking, you are free to do whatever you like of course :-))

Veronica says:

It's also called "midnight pasta " because it's traditionally a dish that chefs make after a long day of working and it's so fast and easy. Those ot you that have worked in restaurant industry know most people work late hours. It usually has parsley as well and guuuuurl I make mine in a WOK.

Leah DelPezzo says:

Literally making it right now 👌

Zack Nelms says:

Fantastic!!

Emelia Onichi says:

Cool =D top little parsley on the top and it would look more delirious.

Vanessa Z says:

"But I'm not doing this for my health, let's be real."

Goddess 😂❤

And also – I've heard that you shouldn't add oil to the water you boil your pasta with, because it makes the flavour/sauce not "stick" to the pasta. But I guess you're not adding a sauce anyway 😂
