This week at my work we are having a international food day where everyone brings a food from their country.
I am the ONLY vegan in my workplace so I had to represent and I challenged myself to make some vegan kiwi food! Lets see how i get on…….

Afgan Recipe – Altered original recipe from Chelsea Nz
Ingredients:
1 cup dairy free margarine (softened)
½ cup Vegan Caster Sugar or Organic Raw Sugar
2 tsp vanilla essence
1 ¼ cups of plain flour
1/2 cup cocoa
1 ½ cups cornflakes
Icing:
1/4 cup Carob powder or Cocoa Powder
1 Cup Icing Sugar (powdered sugar)
3 Tbsp Coconut Oil
1-2 Tbsp water
Method:
Preheat your oven to 180°C. Grease or line a baking tray with baking paper.
In a large bowl beat butter, sugar and vanilla until light and fluffy. Sift in the flour and cocoa, add the cornflakes then stir thoroughly until the mixture is combined.
Place heaped teaspoonfuls onto a baking tray, squeeze mixture together gently if necessary then press lightly with a fork.
Bake for 15 minutes . Cool on a wire rack before icing.
Icing: Mix carob, icing sugar, oil and 1 Tbsp boiling water at a time until combined, adding more hot water if necessary until icing is a spreadable consistency. Ice biscuits and top each one with half a walnut.

Nuttelex is palm oil Hun… I asked for a response if it was sustainable and not harming orangutans etc. After a week of silence I received a 3 page essay rabbiting on how they donate to local rescue organisations and how one of their products contains coconut oil. So that to me would be a no. If not using butter just bake at a lower temp. You make lovely videos.
