Florence pasta with tomato and onion?
Melanzane alla parmigiana?
I mean, we've so many dishes that work for everyone, many of them are also easy to cook, don't go trying to replicate italian dishes that you might not have even ever tried since you're vegan and from another country.

Now that i saw the belower comment section i remembered about cheese.
I did a list of vegetarians and vegans plates but you can just check on internet by yourself to find more vegan ones
