Back to our regular scheduled programming! Who here hates the taste of eggplant, but thinks this might change their mind??
Nice recipe, the introduction is just sooo lengthy. Start at around 3 minutes.
The salt draws out the liquid and creates that barrier like you said, but also the liquid itself can be very bitter, so the salt acts to make the eggplant not bitter as well.
I put my seasonings in with my olive oil with a little hot sauce,brush both sides of eggplant and put under broiler on high heat. When it is brown on both sides , I sprinkle mozzarella and a spoon of tomato sauce then Parmesan and put back under broiler until it is melted. For seasonings I use season salt , Italian season and a little hot sauce.
That looks pretty good. One thing I think would be great on there and in keeping with the Middle Eastern theme would be to brush it with a little saffron oil, which I think is just clarified butter or ghee and some saffron in it till it turns it reddish orange.
I listened 2 minutes and wanted to say "Shut up and get on with it. Too much rambling." No one cared if you were taught by somebodies granny. We don't a history lesson.

In the first recipe, it looked like you scored the eggplant slices before you salted them but I don't remember you mentioning that step. Are we supposed to do that?

Eggplant has a sponge texture that makes it challenging for most to like. My most disliked vegetable is asparagus. Do you have ways of preparing that tastier?

At the start of quarantine, I was adventurous and planted a Japanese eggplant, couldn't find the big dark purple variety, and a white eggplant plants in my garden. They are producing now and so I have been looking for ways other than babaganoush to use them. Thank you for this video and the comment section on this video, you all are wonderfully helpful!

Love the eggplant recipe! How about tomato chunks? I can't get behind big tomato chunks, especially if they're raw. The texture and the "juicy" parts freak me out. Lol
If your eggplant is soaking up oil, it's because the oil is not hot enough, so just make sure your oil is hot enough to avoid that problem and the same goes for french fries.
I actually love the taste of eggplant, I don't find it bitter – the entire flavor profile is actually delicious if you just cook it right, as with any vegetable. Please don't under-cook it; the fork should slip right through it.
If you have a hard time with the taste of a food, incorporating it into common dishes first to get used to the taste can help, such as dicing it fine and adding it to spaghetti sauce, putting it on a pizza or in a lasagna.
You can also try popular dishes that compliment eggplant, like Bagara Baingan (my personal favorite), Sicilian Caponata, Aloo Baingan, Eggplant Parmesan, Baba Ganoush and Bangain Bharta. Good luck 🙂
I find that the Ichiban var (Japanese variety, longer and skinnier purple eggplant) to be far less bitter than the Italian variety that you typically find in the store. Also, a major bonus of eggplants is that they are CRAZY easy to grow at home out on a balcony or patio. Get yourself some regular old potting mix, some Ichiban starts, a decent size terracotta pot (or fancier if you like), and a tomato cage for the plant to grow up. It is probably one of my favorite vegetables to grow because the Ichiban has is a very attractive plant and has pretty purple flowers… plus, they just look so freaking cool when the fruits mature.

Eggplant is my favorite vegetable😍I don’t even salt it, I just season and cook it as is (oil, Cajun, adobo 👌🏻). But I grew up eating it so I guess I’m used to it🤷🏻♀️
