Vegan Air-Fried Artichoke Hearts Two Ways + Two Sauces

Whether you’re trying to save money, or the planet, it’s always a good idea to use what you already have. I like to keep a well-stocked pantry, but sometimes I allow myself to over-stock, and that can sometimes lead to food waste. So, I did myself and my wallet a favor, and came up with a recipe using what ingredients I had on hand. I was more than pleasantly surprised with the results, and it just goes to show you that with a bit of ingenuity, chickpea flour, and some type of breading, anything can truly be turned into a Buffalo “wing”. Chicken’s got nothing on these delicious, fairly healthy, and super simple to make air-fried artichoke hearts.

I made these tonight…….and they were AMAZING. I will be making these often. I did use Panko because that's what I had. I also, like you, like to pulse my Panko a little to get the crumb a little finer, especially when each breaded morsel is so small like these hearts are. Mine took about seven minutes total……..I didn't turn them or disturb them because I didn't want the breading to fall off. I misted them with Olive oil about three minutes into it. They had a nice firm shell and were so crispy. Absolutely delicious. I made a Mayonaise, Ketchup and Sriracha dipping sauce for them. YUMM.

Oh wow, is chickpea flour just dried chickpeas blended/grinded down? Thats so obvious but I never would've thought about that haha. I have always made a trip to a health food store a little far away to get chickpea flour when I have had dried chickpeas in my pantry all this time. I feel ever so slightly stupid haha.

What a great idea! I have panko bread crumbs sitting around and this is something I should try. I stay away from salt because there is so much hidden sodium in everything. Have you heard of Rob Greenfield? He has great ideas and podcasts on YouTube – a zero / less waste guy whose also vegan. Check him out…….
