I made this last night and added mustard powder, onion and garlic powder and was really excited to try it, it was really lacking salt so I'd add more before putting into oven, but overall tasted great and would make again! The bread crumbs really made it next level too.
I made this today and loooved it, however I definitely recommend using less garlic and less salt because they were both pretty over-powering. I sprinkled some shredded vegan cheese on it while it was still hot and it was soooOo good! So if you have access to that I would for sure add it! 🙂

I tried the microwaved version of this recipe and it was actually pretty good. If you're not vegan, you can add cheese and it would also taste good. Is this a satisfying replacement for mac and cheese? In my opinion, yes. I will update with how the recipe went for me.
